Vegetarian Split Pea Soup with Soy Protein Recipe

  • 1 tablespoon extra virgin olive oil
  • 2 large onions, peeled and quarter
  • ½ teaspoon salt
  • 2 cups dried, split green peas, picked over and rinsed
  • 7 cups water
  • ½ cup fresh lemon juice
  • ¼ teaspoon smoked paprika
  • 4 scoops GNC Earth Genius Soy Protein - Unflavored

In a large pot, heat olive oil over medium heat. Stir in onions and salt. Cook until the onion softens. Add the split peas and water. Bring to a boil, then reduce heat and let simmer until the peas are cooked (~45 minutes). Stir in lemon juice, paprika and soy protein and stir well. Put soup in a food processor and pulse until well blended. Serve hot.
